Welcome, Autumn!

Don't be jealous, ladies, but my husband is quite the gourmet cook at our house. After spending Sunday in Port Townsend with my mom, I came home to a lovely pot roast, with chanterelle mushrooms, baby carrots, onions, and mashed potatoes that my husband had waiting for me. What a cozy dinner in honor of the new season!

This looks so delicious. I think that roast beef and carrots were made for each other. When my mother made pot roast, she would always add carrots and celery to the pot, sliced lengthwise. Your hubby is solid gold!

Pot roast is one of my favorite dishes, but I haven't made it for a while... what a autumn dish indeed!! :)
